This was lunch yesterday, just a bit different, it was not my original idea but I did adapt/change it a little.
Watermelon, smoked salmon peas and bean with some feta on top. I had bought salmon for Christmas but ended up not using it, as the expiry date was coming closer, I thought I had better use it. If I buy smoked salmon, I normally only buy 100 gms a little goes a long way but this time I bought 300 gms.
